5 Minute Tasty Cucumber Snack

I love experimenting with different ways to eat veggies. I grew up eating a lot of flavourful food, and veggies didn’t always taste like “veggies” I’d be served at school or in public places.

I’ve always enjoyed vegetables, and I think part of the reason that’s true is because of the different ways I got to eat them as a kid.

This 5 minute healthy snack idea is for a simple snack or addition to a meal when you want something very light and energizing.

Ingredients:

  1. 1 cucumber

  2. 1/2 a lemon’s juice

  3. 1 tsp apple cider vinegar

  4. Salt and pepper to taste

  5. 1-2 tbsp nutritional yeast

Instructions:

  1. Chop the cucumber into bite-sized pieces

  2. Add lemon juice, apple cider vinegar

  3. Add salt and pepper and sprinkle with nutritional yeast

ALSO: Nutritional yeast is rich in b-vitamins known to support energy and mood.
